Jean-Paul Acker, 30, grew up in Colmar, learned his trade in the Munster valley, returned to La Cheneaudière as commis in 2011, spent seven years learning from Roger Bouhassoun and Daniel Stein, left for Provence to work under Glenn Viel at L'Oustau de Baumanière at the moment Viel earned his third star, and came back to take charge of the kitchen in 2021. On 31 March 2025, the Michelin Guide awarded him Le Feuillage's first star.
The newly renovated dining room — black drapes, hammered copper, circular alcoves, monumental chandeliers, designed by cabinet Projart — frames a cuisine that does the same thing: something recognisable, slightly tilted, with a precision that surprises. White Alsatian asparagus shaved into filaments with cockles and a shallot condiment in vanilla butter. Glazed white radish with Alsatian horseradish, confit egg yolk and parsley sabayon. Fennel in syrup with lemon-tarragon sorbet. A single tasting menu at €145, thirty covers maximum, one service per evening.
Villa Cosé: the next chapter
La Cheneaudière also earned 2 Michelin Keys for the hotel — joining a list of 38 establishments in France. Owner Nicolas Decker has announced the extension of this ambition: Villa Cosé, a new 5-star hotel-spa in the heart of Colmar, planned for 2027. A €17 million investment intended to give this city of 10 million annual visitors its first genuinely grand luxury address in its historic centre.
